Ideal Protein Eggplant Casserole is a phase 1 meal that facilitates weight loss.
Ideal Protein Eggplant Casserole is a lean protein. However, is a bit higher in fat than other proteins such as chicken and fish. Therefore, we don’t use any olive oil in this meal. Our Eggplant Casserole, like all Ideal Protein phase 1 meals is a low carb meal and facilitates weight loss while sacrificing nothing on flavor. All Ideal Protein phase 1 meals are gluten and dairy free. This meal contains 1.4 cups occasional vegetables, .6 cup select vegetables and no oil used.
Benefits of Eggplant and Cauliflower
Eggplant contains potassium and fiber. And at just 25 calories and less than 1 gram of fat per serving, it’s a guilt-free food. Eggplant has antioxidants like vitamins A and C, which help protect your cells against damage. It’s also high in natural plant chemicals called polyphenols, which may help cells do a better job of processing sugar if you have diabetes. Although it is a healthy vegetable it is considered an occasional vegetable on the Ideal Protein diet. Because Ideal Protein dieters can’t have more than 4 cups of occasional vegetables per week, our Chef’s mix cauliflower rice into the ground meat. This allows our chef’s to include the full 2 cups of raw vegetables in this meal without adding in too much of an occasional vegetable.
Cauliflower is an easy to digest vegetable and contains vitamins and minerals including folate, vitamin A & C. It’s also a good source of dietary fiber. Cauliflower can also improve immune function and lower blood pressure. Although it can be bland when unseasoned, our chef’s add season it well. It is definitely a tasty addition to the Eggplant Casserole.
