Lean and Green Chicken Creole
Our chef’s prepare the Lean and Green Chicken Creole meal using chicken, tomatoes, bell pepper, mushrooms and cauliflower rice. This meal has only 11 net carbs, and 1.5 cups of cooked vegetables and 6 oz. of cooked chicken. It‘s a low fat and low carb meal that will not only facilitate weight loss . Our chef’s have formulated this meal, along with other Chicken recipes to follow the guidelines of the Optavia diet. All meals have 10-20 grams of fat with this one having just 12 grams of fat. It is sure to satisfy you, while facilitating weight loss. However, because we’ve mastered the art of preparing full flavored “diet” meals, you won’t feel like they’re dieting.
Why Cauliflower Rice Instead of Regular Rice?
Optavia does not allow traditional rice of any kind. This includes brown rice, white rice, jasmine rice, etc. Instead cauliflower rice is a great substitute. Traditional rice is high in carbohydrates, however, cauliflower rice is low in carbs and low in calories. Optavia restricts carbs so rice is definitely a no-no. Cauliflower is an easy to digest vegetable and unlike rice, it’s lectin free. It contains vitamins and minerals including folate, vitamin A & C, and is a good source of dietary fiber. Cauliflower can also improve immune function and lower blood pressure. Although it can be bland when unseasoned, our chef’s season it well. After mixing the cauliflower rice into food, like Gumbo or Ettoufee, you may not even notice it’s not rice! However, if you love traditional rice, have no fear! It will be reintroduced into your diet once you’ve lost your weight.
