Lean and Green Taco Bowl

Why Cauliflower Rice Instead of Regular Rice?
Optavia does not allow traditional rice of any kind. This includes brown rice, white rice, jasmine rice, etc. Instead cauliflower rice is a great substitute. Traditional rice is high in carbohydrates, however, cauliflower rice is low in carbs and low in calories. Optaiva restricts carbs so rice is definitely a no-no. Cauliflower is an easy to digest vegetable and unlike rice, it’s lectin free. It contains vitamins and minerals including folate, vitamin A & C, and is a good source of dietary fiber.
