Corn: To Eat or Not To Eat?
This week’s Ground Turkey Tamale Pie contains corn and corn meal. When adding this recipe to our menu, we wanted to dispel some myths about corn. Have you given corn a bad rap? With so much circulating about carbs and the need to cut back on carbs, corn has taken a hit. Corn is a starch but contains complex carbohydrates and these are the good carbs. This starchy vegetable has B vitamins, vitamin C, magnesium and potassium , as well as antioxidants that are good for eye health. There is a myth that most corn is genetically modified. One study by Friends of the Earth, found that only 2.4% of samples were genetically modified. Corn also contains insoluble and soluble fiber. Insoluble fiber is good for the body which found to feed the good bacteria in your body.
So, when you see corn on our menu, have no fear! Enjoy it knowing that corn contains needed vitamins, antioxidants, fiber and other nutrients good for the body! Also know all meals are portion controlled so any ingredients high in carbs will be served in moderation!
